1 kg russet apples • 4 plums • 100 g sugar • 100 g raisins
For the base:
120 g sugar • 120 g butter • 120 g "00" • flour 120 g extra-fine cornmeal • 120 g unblanched almonds, roughly chopped • Pinch of salt
Wash the fruit and halve the plums, discarding the stones; cut into thick segments. Peel the apples and cut into segments.
Combine in a bowl; add the raisins after they have been soaked and all the water squeezed out. Add the sugar, mix and set aside for a few minutes.
Meanwhile, prepare the tart base: combine all the dry ingredients, add the diced cold butter and rub with your fingers, without compacting the mixture too much.
Tip a little of the mixture onto the bottom of a well greased oven dish, then cover with the fruit and top with the remaining crumble mixture.
Bake in the oven at 180° for 40/45 minutes; serve warm.
