3 eggs • 200 g sugar • 100 g flour • 400 g carrots • 200 g ground almonds • one teaspoon baking powder
Beat the egg yolks with the sugar; if necessary, add a little milk or cream.
Add the finely chopped carrots and almonds, the sifted flour and the baking powder.
Whip the egg whites with a pinch of salt until they form stiff peaks, then gently fold into the mixture.
Grease and flour a tin, pour in the batter and bake in the oven at 180° for approx. 45 minutes.
