For Francesca Bencivenga's special version
9oz flour • 3 tablespoons baking powder (bio) • Salt 2 very ripe bananas • 2 1/2oz bio margarine • 2 1/2oz brown sugar • Grated rind of 1 orange • 1 egg • Handful of walnut
Heat oven at 380F. Beat margarina and sugar, add orange rind and egg. Sift dry ingredients and mix with the bananas mashed with a fork, add walnuts in pieces. Line a bread tin with baking paper, prisnke top with a bit of oats, some pieces of walnuts and a bit of brown sugar and slightly press down.
Bake for 50 minutes.
