THE SUPER BURNER

All gas-powered cooktops are equipped with a powerful double-inset super burner.  This burner design means that you essentially get two burners in-one.  The upper tier of the burner produces maximum BTU power for faster boils, or for searing steaks. Meanwhile, the lower tier allows for a gentle flame mode for simmering and melting.

BRIDGING GAPS

Induction cooktops by SMEG come with at least one bridge zone, which gives you total freedom when using the cooktop.  In this area, lightly marked with white lines on the cooking surface, pots and pans are detected wherever they rest. VARIABLE ZONES

Most ceramic (electric) cooktops offer at least one variable cooking zone that is lightly marked with white lines on the cooking surface.  In this area, you can control the size of the cooking area that coincides with the size of the pot or pan you are using.  This adaptability lets you choose the burner size and provides the most-even heat distribution

DEMYSTIFYING INDUCTION

Induction technology is not new, but it is gaining in popularity given its precise temperature control, powerful capabilities and energy efficiencies.  Many people are unclear just how induction works so perhaps we can lend a hand to increase your awareness.  In short, the power and precision of the technology comes from an electromagnetic field below the glass cooktop surface that is generated by passing an alternating electric current through a coil of copper wire.  The resulting oscillating magnetic field wirelessly induces current directly to magnetic cookware, causing it to heat up.

Essentially, induction cuts out the intermediate step of heating up a burner and then transferring the heat to the pot.  90% of the energy created is transferred directly to the pot which is significantly higher than gas cooktops where, on average, 50% of the energy is wasted, going around the pot thus increasing the ambient room temperature. While that might be a good think in Boston during winter months, it will increase air conditioning bills in Dallas all summer long.  Food for thought.
